Unlike the red meat options, our chicken is grilled over a lump oak charcoal fire which allows the product to cook without absorbing a tremendous amount of smoke. Many pit masters will try and smoke chicken the same as red meats which causes it to turns out black, dry, and over smoked. With our cooking method, the color and taste of our chicken is perfect for those looking for a protein alternative for guests. The half chickens, leg quarters, thighs, and breasts are prepared gluten free. Our chicken is another amazing high quality main dish towards the bottom of our main dish price listing. Like all of our products, no short cuts are ever taken.
We also strive to provide many other alternative options. We can prepare smoked turkeys, provide a full burrito/taco bar, create an amazing breakfast buffet, and make an outstanding smoked prime rib. If you’re looking to step away from the normal barbecue options please let us know and we will do our very best to provide your every need.
All of our side options are made from scratch as are the 3 distinct barbecue sauces we make. (bread and pickles excluded sometimes). Several of our sides are in fact gluten free and or can be created gluten free on request.
